Preparation

  1. Base: Crumble two Fibre One™ 90 Calorie Chocolate Fudge Brownies into a medium bowl until fine and crumbly. In a rush? A few quick pulses in a blender will do.
  2. Seeds: Add a crunchy four-seed mix (sunflower, sesame, golden flax, pumpkin). Can’t find a mix? Combine 1½ tsp each of sesame, sunflower, and golden flax seeds, plus ½ tsp pumpkin seeds.
  3. Bind: Mix in 20g of peanut butter (start small and add more if needed). The texture should be slightly sticky but firm. Too dry? Add more PB. Too sticky? Toss in seeds or shredded coconut.
  4. Shape: Form about nine bite-sized balls using your hands or a spoon.
  5. Coat: Roll each bite in 8g of finely chopped pistachios or peanuts. Press gently for an even coat.
  6. Store or Serve: Enjoy immediately or store in an airtight container in the fridge for up to a week.
